Spiced Macadamia Nuts
1 tablespoon vegetable oil
2 cups raw macadamia nuts
1 tablespoon sugar
1 teaspoon curry powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon chili powder
1 teaspoon kosher salt
1/2 teaspoon cayenne pepper, more to taste
1Preheat the oven to 250. Line a baking sheet with parchment paper.
2Place the oil and nuts in a medium size bowl and toss until well coated. Add the remaining ingredients and mix well to coat evenly.
3Transfer the nuts to the prepared sheet and arrange in a single layer. Place in the oven and bake until lightly browned, stirring occasionally, 25-30 minutes.
4Remove from the oven, immediately loosen the nuts with a metal spatula, and set aside to cool before serving.
